Frugal Lobster or Crab Salad

Most of my family loves vegetables…all but my 3 year old. We love a meal that is veggie rich, and this salad is a family favorite! It’s very healthy and frugal. We usually double the recipe and eat it for a couple of days…it’s even better on the second day!

You will need:

Dressing

1/2 cup olive oil (you can substitute canola oil if you need it to be more frugal…canola oil is also heart healthy)

1/2 cup lemon juice

1/2 cup sour cream

1 1/2 tsp yellow mustard

1 1/2 tsp salt

1 1/2 Tablespoon sugar

Whisk together all ingredients until well blended and set aside.

Salad

1/2 head cabbage sliced into thin strips

1 medium onion, minced

1 16 oz. can garbanzo beans, drained

1 12 oz bag of imitation lobster or crab (for the salad in the picture, I doubled the recipe and added both imitation lobster and crab)

1 medium bell pepper, diced

1 medium zucchini, cut into slices then halved

2 or 3 medium tomatoes, diced

Chop salad ingredients as described above and toss well in large bowl. Add salad dressing and mix well. You can serve immediately or refrigerate for a few hours to allow the flavors to meld.

Extra delicious served with soup and bread! 🙂
